A while back, Katie held a vegan bake sale to raise relief money after the earthquake that hit Japan. The other day, I finally got the goodies that I bid on (there were a lot of communication issues, but it all got sorted out and that’s what matters, right?)! Chocolate Orange Cupcakes by Amber.
As anyone knows, it’s the frosting that makes the cupcake, and this was no different. I loved this frosting! It was like an orange creamsicle/dreamsicle. Better yet, Amber also sent me some really funky “Go Veg” magnets from her etsy store and some chocolate chip cookies! As much as I loved the cupcake frosting, I loved these cookies even more. I have no idea what’s in them (other than chocolate chips, durh), but they are so good! I’ve already eaten

Before my run, I had a simple bowl of oat bran. 1/2 c oat bran made in 1 1/2 c water (caramel tea, actually), with flax, chia seeds, vanilla protein powder, crunchy almond butter, and strawberry preserves. This is what I usually eat before runs and have found that it settles well with me, so I’m not about to start messing with it now.
How crazy is it that today is the last day of April!? May starts tomorrow and I have finals starting on Monday. Woah. Mind bomb. Pow.
It has officially been one month since I’ve chewed gum! Yay for getting to cross another item off of my 40 in 400 challenge list! Honestly, I don’t even really think about it that much anymore. I used to chew gum, I think, to control cravings. Not cravings for food exactly, but just a feeling that I needed to have something in my mouth and be chewing. I think that I’m going to keep this going. I had a real problem; going through 1 or 2 packs of gum a day (and I’m not talking the packs you get out of vending machines). After all of that nastiness that happened with the cinnamon gum and my mouth, I just don’t want to get caught up in that again.
Last night, I went over to a girl friend of mine’s house and watched the Royal Wedding (TiVo for the win). Kate’s dress was amazing! Pippa looked awesome herself. I really didn’t care for the wedding itself, but I was all over those dresses and crazy hats *cough* Beatrice *cough*. And I’m I the only one who thinks that the Queen is adorable? I love little old ladies. But that woman who designed Princess Diana’s dress was kinda scaring me, not gonna lie, haha.
The boyfriend’s interview(s) (FIVE hours of interviews with 5 different departments) went well. He sounded really happy and optimistic over the phone. *fingers crossed* that he gets a call back and they offer him the summer internship that he wants. It would be a little hard having him away for a few months, but at the same time it’s only an hour or two away and would be a great experience for him. And if he also gets the fall internship in Maryland, all the better! We’ve been together about a year now and I know that our relationship is strong enough to be able to withstand a long-distance relationship. He’s worth giving it a shot.
Weekend = long run. EIGHT miles were on the training plan and so eight miles it would be. Thank goodness for sun; it makes the wind more tolerable.

I decided to break it up into two 3-mile loops and then one 2-mile loop to allow for water and gel breaks. Plus, by breaking up my run into shorter distances that I can cover relatively easily, I think it makes the longness of the run more enjoyable. 8 miles doesn’t seem quite as daunting of a task when you just think of it as 3+3+2. Even with the breaks, this was a mental challenge for me. This is yet another personal distance record for me (many more to come). I didn’t even look at my pace to tell you the truth. I was so shocked when I came back and uploaded my run to see the times! Here I was thinking that I was so slow because of the wind (around 14-17mph) and actually I was going faster than my goal pace!
The gels that I tried were Gu Vanilla Bean and PowerBar Strawberry-Banana. I didn’t really like the PowerBar flavor, but bought it because it has some caffeine in it. The Gu gel, however, was probably one of the greatest things I’ve ever tasted in my life (maybe a slight exaggeration, but still really good!). The only thing I didn’t like about it was that it was pretty thick compared to the PowerBar gel, making it a bit harder to squeeze out and consume in a timely manner. I tried to not take longer than a minute to drink water and eat my gels. I’m afraid that if I stop too long I’ll lose my momentum (both mentally and physically) and not finish what I set out to do.
