I’ve been feeling kind of “off” for the past few days, and so opted to make something plain for breakfast this morning. Gina aka The Fitnessista’s b-fast cookie dough cereal.
In the mix:
– 1/3 c oats
– 1 scoop protein powder
– 1 T almond butter
– vanilla soymilk
Heated up in the microwave for a few seconds before consumage commenced. It’s been awhile since I’ve made b-fast cookie dough cereal and I’m beyond glad that it is back in my life again. So super easy, simple, and delicious. I think that my body needed it.
Lunch was a repeat of yesterday: Tofu wrap. I kind of wanted a smoothie, but it was just such a cold and cloudy day that I couldn’t justify it to myself. I needed something warm. Note: I don’t usually like eating soup unless I have to, like when I’m super sick and my throat is swollen shut. Still didn’t think ahead enough to be able to marinate the tofu, but I did get to press it longer at least. Eaten with a side of fruit.

Once home, I knew what I wanted. Roasted eggplant (aubergine if you’re from the UK)! With ketchup for some dippage action. I honestly didn’t even care what else went with it to round out the meal. I just wanted eggplant. Random, much? Also, randomly, did you know that eggplants are considered a berry? The eggplant fruit also contains nicotine, but you’d have to eat 20lbs. of the stuff to equal that of a single cigarette, so I think I’m good, haha.
Tomorrow I’ll be posting my very first official What I Ate Wednesday (WIAW). What I post on here is definitely not all I eat in a day, but tomorrow you’ll literally get to see and read about everything. Hopefully I remember to photograph everything since I’ve never done this before. I’m thinking of just keeping my camera in the kitchen so it’s always within arm’s reach.
Even though I didn’t have any finals today, I still had to wake up early to take my mom to work. I needed to run errands and so needed to be able to have access to the car to get myself around town. I had to go to the post office and sign a paper at work since I wouldn’t be working at all this week and still want to get paid for my previous week’s work. I considered going to the mall, too, so that I could use a birthday coupon I was sent, but I knew that if I went by myself that I wouldn’t get anything and so just didn’t even bother.
When I opened the door this morning, what did I see but my Sun Warrior package that I bought from a killer OpenSky deal.
I included my water bottle in the picture as a size comparison. Look at how huge! I only have a few more scoops left in my other stuff and then I can start it on this bag. Can’t wait to see what all of the hype is about! I’ll be sure to tell you all about it, of course.
One of my friends came over for a few hours and I helped him study for the final we have together tomorrow morning. I’m so nice, right? I’m just glad that the test is in the morning and that gives me the majority of the day still to get in a run (hoping 5 miles?) and study for my last final on Thursday.
Michigan decided to go back to being cold today, despite the fact that it is May and so totally unacceptable. Regardless, I’m a runner. I love to run. I wanted to run. So, I dug out the leggings that I had thought were gone for the season, laced up my sneakers, thought to myself “Just do it“, and went out into the “blistering” cold to run a quick 5K (okay, okay, 40deg isn’t terrible, but it’s by no means okay either).

Not bad! Much faster than I thought. Maybe (hopefully) I’m just getting faster in general? The ankle didn’t cause me any trouble either, thank goodness.
