She Looks Like You

Apologies in advance for the short post!!


Sunday = pancakes.

Pumpkin-Raisin-Chocolate-Chip. Essentially the same recipe as my Pumpkin-Raisin pancakes, but I subbed 1 T of flour for protein powder and half of the raisins for mini vegan chocolate chips.

Mother’s Day Carrot Cake for Two around lunchtime, based on Katie’s recipe:

Carrot Cake Cupcake

– 1/4 c whole wheat flour
– 1 T + 1 t applesauce
– 1/16 t salt
– 1 T shredded carrot
– 1 T water or non-dairy milk
– 1/4 t vanilla
– 1/4 t cinnamon
– 1/4 t baking powder
– 2 t sugar (I used Truvia)

Combine all dry ingredients and mix in liquid ingredients. Transfer to greased muffin tin, ramekin, or mini loaf pan. Bake at 325deg for 12-15 minutes.

Cream Cheese Frosting

– 1/4 c silken-firm tofu (Mori-Nu)
– 2T + 1 t Tofutti cream cheese
– 1/4 t vanilla
– sweetener to taste (I added 1.5 tsp Truvia)

Blend tofu until smooth. Add other ingredients and blend again.

The cream cheese frosting is to die for. Spoon-licking was involved and I seriously considered licking the blades as well. My mom didn’t really dig it that much since she’s not a vegan and “doesn’t eat healthy” (her words, not mine). But, she’s on Weight Watchers and I wanted her to be able to have a treat without interfering with her diet plan.

Last night, as part of my dessert, I made another Katie-inspired recipe.

Single-Lady Chocolate-Chip Cookie

– 15 g (about 5 t) whole wheat flour
– 1/16 t baking soda
– 1/16 t salt
– 2 t applesauce
– 1/4 t vanilla
– 10-15 g chocolate chips
– 1.5 t sweetener
– a few splashes of non-dairy milk to get the dough to stick together

Bake at 350deg for 7-8 minutes on a greased cookie sheet.

This cookie turned out deliciously chocolate-y and dense. I’m definitely hanging on to this recipe for future reference.

Sorry that this is all that I’m posting for today, but I’m super busy getting ready to go out tonight, dealing with the cable guys, running around, and celebrating motherhood.



As you may know, today is Mother’s Day! As much as we fight and don’t get along sometimes (especially when I’m living at home), I love my mom more than anything. In honor of her, I decided to make her favorite flavor of cake, carrot (recipe above), for a sweet lunchtime treat as we waited for the cable people to fix our line. She doesn’t know it yet, but some flowers are going to be delivered to her at work tomorrow as well. She thinks that she isn’t getting anything!

I’ve been told we look alike. What do you think? (As if you could see me underneath my massive hat.)

Guess who gets to go out and party tonight for her friend’s birthday? This girl! So excited! 🙂

Speediest run to date, I think. My hip flexors are a bit sore so I’m really craving doing yoga tomorrow.

What did/do you do for Mother’s Day?

Do you eat pancakes one by one or dig through the entire stack at once? – I prefer one by one.

    • They SURPASSED my dreams. Pumpkin and chocolate is actually a wonderful combination. 🙂

      I agree that it’s weird that some holidays aren’t on the same day in every country. I feel like that would get confusing if a mother lived in a different country than her children/grandchildren.

  3. I need to jump on the pancake sunday bandwagon. All the pancakes make me so jealous the next day! I eat them one by one, if you eat the whole stack they are gone to fast!
    Katie has the best recipes huh?

    Oh, and you and your mom totally have the same smile. It’s cute 🙂
