What I {…} Wednesday

Hey everyone and welcome to another installment of “What I… Wednesday“!

The day started with, of course, a divine Green Monster in a bowl.

Mahvahlous, dahling! I only put in two (humongous) strawbs in the mix, but you could really taste/smell them and they definitely altered the color from a more vibrant green.

After my Kinesiology class, I snacked on a few nectarines before Spanish class began. I have 1 exam tomorrow, a paper due Friday, and then the final exam next Thursday, and in KIN I have a few peer group evaluations, a group presentation, and a final exam yet to do. But, in just over a week I’ll be done with the session and on to the next one!

After class, I went to a new (to me) place in town called Wanderer’s Teahouse. I had seen it over and over since it opened about a year ago, but had yet to actually go in and try anything. I went with my dad and ordered the Spice Road Lentil & Oat Loaf Sandwich:

Homemade lentils baked with onions, celery, carrots & sunflower seeds, covered in tomato sauce and served with artichoke spread on whole grain bread.

It. Was. Amazing. This was one serious sandwich. Just from picking it up I knew that this was a hearty, manly sandwich and it sent my tastebuds on a nice, little comfort-food journey. I would for sure return again and order than sandwich over and over again.

After lunch, I was done for the day on campus, so I took the bus home and just barely got into the house before it started pouring rain outside. It only rained for maybe 10 minutes, but it was a LOT.

I have Zumba later with my mom and I think that I’m going to make one of these for dinner afterwards (recycled picture):

Quinoa with almond butter, and I’ll probably throw in some bloobs and maybe some raisins as well.


Now on to other news I want to share with all of you!

  1. I got my first article published for my virtual internship. You can access it here. Let me know what you think!
  2. Yesterday, I bought a plane ticket to San Diego for this September. I also registered myself for the 2011 Food & Nutrition Conference & Expo (FNCE)! This trip is going to cost me a pretty little penny, but I’m really excited! I’m flying out Friday morning and coming back that following Monday night so that I will only miss 1 class. I really want to scope out that expo since reps from some of my favorite companies will be there! (Clif, Udi’s, Larabar, Bob’s Red Mill, Amazing Grass, and Silk just to name a few.)
  3. I’m meeting with my counselor tomorrow to talk about some of the mental and physical battles that I’ve been going through ever since I started getting serious about my recovery over a month ago. I’ve made tremendous strides since then, but after I had a pretty bad meltdown a week or so ago I decided that I really needed to reach out for help from someone. So, I e-mailed her. I don’t know what to expect, and could very well leave tomorrow frustrated and angry beyond belief, but it’s better than me continuing to struggle on my own when I clearly need help.

  1. I like how practical your solutions were in the article! They may not be the most healthy choices, but how many people are going to go out and buy a box of Organic O’s or Kashi for snacking? I think you wrote the article very nicely and were quite concise and informative. I also think it’s really cool that you got something like that published – now I need to find out how I go about doing something of that nature around here. 😛

    • She’s a nutritionist, so the majority of the people she sees are dealing with weight-control and weight-loss issues. For the majority of America, I think it’s more about getting people to take baby steps with little substitutions that to throw them right into a organic, vegan, raw, etc. lifestyle, right?

  2. Yay! Congrats on getting those articles published! I am so happy for you since I’m a journalist as well and I know how important it is to have published works! 🙂
