WIAW: Just A Piece

When it comes I wanna wail “WHATIATEWEDNESDAYTUESDAY!”

Okay, so since I was basically on my death bed yesterday it made Tuesday feel like Monday and so taking pictures for a WIAW was the last thing on my mind. But, I did make a new protein bar recipe that I ate on Tuesday that I can share! Plus, since it’s the beginning of a new month, how about making this a recap post as well?!

Almond-Orange Protein Bars

1 1/2 c oat flour
3 scoops vanilla whey protein
1 T baking powder
1/2 tsp salt
1/3 cup Ideal or Stevia in the Raw
3 egg whites (1/2 c liquid egg whites)
1 c unsweetened almond milk
1/3 c unsweetened applesauce or 1-3.5oz container of fruit-flavored baby food
1/4 c Greek yogurt
1 t orange extract
1 t almond extract

Preheat oven to 350deg F. Spray an 8×8 inch baking pan with non-stick spray.
In a large bowl combine dry ingredients. In a medium bowl combine wet ingredients. Add wet to dry ingredients mix well. Pour into prepared pan. Bake for 25-30 minutes or until knife comes out clean. Let cool for 10 minutes.
Makes 8 bars.

– Finished NROLFW Stage 5 and Stage 6.

What’s to come in February? I guess you’ll just have to wait and see…
